The Southwestern Ontario Gleaners recently wrapped its first ever 24-hour marathon creating soup mix out of vegetables deemed unsuitable for grocery stores.
Volunteers have been working around the clock at the groups location in Leamington, cutting, slicing and dicing for its first ever Soup Mix Marathon.
General Manager Joel Epp says they've been turning rejected fresh produce into soup mix to feed those in need in Africa, South America and even right here in Windsor-Essex since 2013.
Soup mix retains the majority of the nutrients of the fresh food but weighs much less so is cheaper to ship and can last for two years.
Epp tells CTV Windsor they're perfecting a process that could be a solution to global hunger.
"It's been a fun night, a fun couple days I guess, that we get some production done but also ... learn more about what we're doing here," he says.
