The grills will be hot all weekend in Windsor's Riverfront Festival Plaza.
The annual Windsor Rib Festival begins Friday afternoon across from Caesars Windsor.
Co-organizer Victor Anast says this year's event includes eight ribbers from Canada and the United States, nine craft breweries and distilleries.
He says the event also features other classic festival foods and drinks.
"There's always going to be the fan favourites, the blooming onions, the poutine, the lemonade, the slushies," says Anast. "New this year, we also have a 'jerk truck' that's coming down for the weekend and, obviously, all the retail vendors that come.
As for the main attraction, he says the ribs fall off the bone.
"A lot of the ribbers have a nice smoke ring to their ribs, that's that nice pink line through the top that shows it's well smoked," says Anast. "We've already done three rib fests this year and people always ask 'how are you always eating ribs?' Well, when they're good, you don't get sick of them."
The people cooking the meat use St. Louis style side ribs according to Anast.
"They smoke them anywhere from three-and-a-half to five hours, depending on their technique and level of temperature," he says. "They all use their own rubs and sauces, so the finish product is really quite nice."
The event also features 11 bands providing live entertainment.
Windsor's Rib Fest is part of the "Northern Heat Rib Series."
The gates open at 4pm Friday and runs until 11pm. The event also runs Saturday from 11am to 11pm and Sunday 11am to 7pm.
Rib fest will also return to Windsor over the Labour Day weekend.
